  • 4 slices bread slices preferably a sturdy bread like sourdough or country bread
  • 4 slices cheddar cheese sliced or grated
  • 4 strips bacon cooked until crispy
  • 1 medium tomato ripe and juicy, sliced
  • 2 tablespoons butter for spreading and frying
  • 1 teaspoon fresh herbs chopped, optional (e.g., basil or parsley)

Method
 

  1. Spread butter evenly on one side of each bread slice. Place two slices, buttered side down, on a clean surface.
  2. Layer slices of cheddar cheese over the unbuttered side of the bread, followed by slices of tomato and crispy bacon strips. Sprinkle chopped herbs if using.
  3. Top with the remaining bread slices, buttered side up, pressing gently to flatten the sandwich slightly.
  4. Heat a skillet over medium heat and add a tablespoon of butter. Once melted and bubbly, carefully place the assembled sandwich into the pan.
  5. Cook the sandwich for about 3-4 minutes, until the bottom is golden brown and crispy. Use a spatula to gently flip and cook the other side for another 3-4 minutes, until golden and the cheese is melted.
  6. Press down gently on the sandwich with the spatula to help it crisp evenly. Once both sides are beautifully golden and cheese bubbles slightly, remove from heat.
  7. Transfer the sandwich to a cutting board and let it rest for a minute. Slice diagonally to reveal melting cheese, crispy bacon, and fresh tomato layers inside.
  8. Serve immediately, enjoying the crispy exterior and gooey, flavorful filling. Pair with a side salad or enjoy on its own for a hearty snack.

Notes

For extra flavor, rub the toasted bread with a garlic clove before assembling. Feel free to add a dash of hot sauce or a spread of mayonnaise for added richness.
