- Spread butter evenly on one side of each bread slice. Place two slices, buttered side down, on a clean surface.
- Layer slices of cheddar cheese over the unbuttered side of the bread, followed by slices of tomato and crispy bacon strips. Sprinkle chopped herbs if using.
- Top with the remaining bread slices, buttered side up, pressing gently to flatten the sandwich slightly.
- Heat a skillet over medium heat and add a tablespoon of butter. Once melted and bubbly, carefully place the assembled sandwich into the pan.
- Cook the sandwich for about 3-4 minutes, until the bottom is golden brown and crispy. Use a spatula to gently flip and cook the other side for another 3-4 minutes, until golden and the cheese is melted.
- Press down gently on the sandwich with the spatula to help it crisp evenly. Once both sides are beautifully golden and cheese bubbles slightly, remove from heat.
- Transfer the sandwich to a cutting board and let it rest for a minute. Slice diagonally to reveal melting cheese, crispy bacon, and fresh tomato layers inside.
- Serve immediately, enjoying the crispy exterior and gooey, flavorful filling. Pair with a side salad or enjoy on its own for a hearty snack.
Notes
For extra flavor, rub the toasted bread with a garlic clove before assembling. Feel free to add a dash of hot sauce or a spread of mayonnaise for added richness.
