- Trim excess fat from the steaks if necessary, then season both sides generously with salt and pepper. Place the seasoned steaks on a plate.1 tablespoon oil
- Wrap each steak tightly with slices of bacon, overlapping slightly to ensure full coverage. Secure the bacon with toothpicks if needed. Place the wrapped steaks on a plate or tray.8 slices bacon
- Heat a cast iron skillet over medium-high heat and add the oil. Once shimmering and hot, carefully place the bacon-wrapped steaks in the skillet. Sear for about 2-3 minutes per side, until the bacon is browned and crispy. Use tongs to flip and monitor for even browning.1 tablespoon oil
- Preheat your oven to 400°F (200°C). Transfer the seared steaks to a baking sheet lined with foil or parchment paper. Insert a meat thermometer into the thickest part of each steak.
- Bake the steaks in the oven for 15-20 minutes, or until they reach an internal temperature of 130°F (54°C) for medium rare, or adjusted to your preferred doneness. Remove from oven and let rest for 5 minutes before serving.
- Remove toothpicks, if used, and transfer the steaks to a serving plate. Slice if desired, and serve immediately, showcasing the crispy bacon exterior and juicy interior.
