Ingredients

  • 200 g feta cheese block or crumbled
  • 250 g cherry tomatoes whole or halved
  • 2 tsp fresh rosemary chopped
  • 2 tbsp olive oil extra virgin
  • to taste black pepper freshly ground

Equipment

  • Ceramic baking dish
  • Oven

Method

  1. Preheat your oven to 200°C (392°F). Place the feta block or crumbled feta into a ceramic baking dish, spreading it into an even layer.
  2. Add the cherry tomatoes around and on top of the feta, distributing them evenly. Sprinkle chopped rosemary over the mixture for aromatic flavor.
  3. Drizzle the olive oil over the cheese and tomatoes, ensuring everything gets a gentle coating. Season with freshly ground black pepper to taste.
  4. Place the dish in the preheated oven and bake for about 15-20 minutes, or until the feta is soft, bubbling, and slightly golden, and the tomatoes have burst.
  5. Remove the dish from the oven and let it sit for a few minutes; the feta will settle into a creamy, cheesy sauce while the tomatoes continue to pop and soften.
  6. Serve the baked feta and tomato mixture warm, spooned directly from the dish, with crusty bread or as part of your favorite breakfast or brunch.
