Ingredients
  

  • 4 cups fresh spinach, chopped roughly chopped
  • 1 cup shredded cheese preferably mozzarella or cheddar
  • 1/2 cup breadcrumbs for binding and texture
  • 2 cloves garlic minced
  • 1 large egg lightly beaten
  • 1 tablespoon olive oil for sautéing
  • to taste salt and pepper season accordingly

Method
 

  1. Heat the olive oil in a skillet over medium heat and sauté the minced garlic until fragrant, about 30 seconds, filling the kitchen with a warm aroma.
  2. Add the chopped spinach to the skillet and cook until just wilted, about 2-3 minutes, stirring frequently. Remove from heat and let it cool slightly.
  3. Transfer the cooked spinach to a mixing bowl and add the shredded cheese, breadcrumbs, beaten egg, salt, and pepper. Mix everything together until well combined and sticky.
  4. Use your hands or a spoon to shape the mixture into small, compact balls, about 1 to 1.5 inches in diameter, placing them on a parchment-lined baking sheet.
  5. Preheat your oven to 375°F (190°C). Bake the spinach balls for 15-20 minutes, or until they are golden brown and slightly crispy on the outside.
  6. Remove the bites from the oven and let them cool slightly before serving. They should be tender inside with a light crunch on the exterior.
