- Cook the bacon in a skillet over medium heat until crispy, then transfer to a paper towel-lined plate to drain excess fat and crisp up further.
- Spread a thin layer of butter on one side of each bread slice—this will help achieve a golden, toasted exterior.
- Place two slices of bread, buttered side down, on a clean skillet or griddle over medium heat.
- Layer slices of cheddar cheese on the bread in the skillet, then top with slices of ripe tomato.
- Break the cooked bacon into pieces and evenly distribute it over the tomatoes, then cover with the second slice of bread, buttered side up.
- Cook the sandwich until the bottom is golden brown and crispy, about 4-5 minutes, then carefully flip using a spatula and cook the other side to match.
- Continue cooking until the second side is also golden and the cheese is melted inside, about another 4-5 minutes.
- Remove the sandwich from the skillet, let it sit for a minute to settle, then slice in half to reveal the melty cheese, crispy bacon, and juicy tomatoes inside.
Notes
Serve immediately while the cheese is still gooey and the bread is crispy. For extra flavor, add a dash of black pepper or a smear of mayonnaise.
