- Place the pitted cherries in a cocktail shaker and muddle them gently until they release their vibrant juice and fragrance, about 10-15 seconds.
- Add the fresh lemon juice, gin, and simple syrup to the muddled cherries in the shaker. Fill the shaker with ice cubes until about three-quarters full.
- Screw on the lid tightly and shake vigorously for about 15 seconds. You’ll hear the ice clink and feel the shaker become cold to the touch, while the liquid turns frothy and a little bubbly.
- Remove the lid and strain the mixture into a chilled highball glass filled with fresh ice, using a strainer to catch any cherry pulp and ice shards.
- Top the cocktail with chilled soda water, pouring gently so it maintains some effervescence and creates a fizzy layer on top.
- Garnish with a whole cherry or a twist of lemon peel on the rim for an attractive finishing touch, then serve immediately.
Notes
Adjust sweetness and tartness by varying the amount of simple syrup and lemon juice. For a deeper cherry flavor, muddle additional cherries or use cherry-infused gin if available.
