  • 2 slices bread preferably sturdy bread like sourdough or whole grain
  • 2 tablespoons basil pesto store-bought or homemade
  • 1 cup cooked chicken shredded or sliced
  • 1/2 cup mixed greens such as spinach, arugula, lettuce

Method
 

  1. Chop the cooked chicken into bite-sized pieces on a cutting board using a sharp knife. Set aside.

  3. Place the pesto-coated bread slices in a toaster or on a grill pan over medium heat. Toast until golden brown and crispy around the edges, about 2-3 minutes per side. Remove and set aside.

  4. On a clean surface, layer the toasted bread with shredded chicken and a handful of mixed greens. Add more pesto if desired for extra flavor.
