Ingredients
  

  • 1 cup dried chickpeas or 2 cups cooked chickpeas
  • 1 cup plain Greek yogurt full-fat preferred for creaminess
  • 1 medium cucumber preferably seedless or peeled
  • 2 cloves garlic minced
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons olive oil optional, for dressing

Method
 

  1. Rinse and drain the dried chickpeas, then transfer them to a pot with plenty of water. Bring to a boil, then reduce to a simmer and cook until tender, about 15 minutes. Drain and let cool slightly.
  2. While the chickpeas are cooking, peel and dice the cucumber into small chunks. Mince the garlic finely and chop the dill for a fresh, herby flavor.
  3. In a small mixing bowl, whisk together the Greek yogurt and minced garlic until smooth and fragrant. Dice the cucumber and fold it into the yogurt mixture along with the chopped dill.
  4. Add the cooled chickpeas into a large mixing bowl. Pour the tzatziki sauce over the chickpeas and gently fold everything together, ensuring the chickpeas are well coated with the yogurt mixture.
  5. Drizzle with olive oil if desired, then season with salt and pepper to taste. Mix gently to incorporate the seasoning evenly.
  6. Serve the chickpea salad chilled, garnished with additional dill if you like. It should look vibrant with creamy dollops of tzatziki, tender chickpeas, and hints of fresh herbs inside.

Notes

You can prepare the chickpeas ahead and store them in the fridge. This salad is best enjoyed fresh but keeps well for a day. Feel free to add cherry tomatoes, olives, or feta for extra flavor variations.
