  • 8 pieces chicken drumsticks skin-on
  • 2 tablespoons coarse coffee grounds freshly ground preferred
  • 1 tablespoon paprika smoked or sweet
  • 1 teaspoon cayenne pepper optional, for heat
  • 3 cloves garlic minced
  • 2 tablespoons olive oil for marinade
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

  1. In a mixing bowl, combine the coffee grounds, paprika, cayenne pepper, minced garlic, salt, black pepper, and olive oil to create a thick spice paste.
  2. Pat the chicken drumsticks dry with paper towels, then rub the spice mixture evenly all over each piece, making sure to cover every surface. Let them marinate at room temperature for at least 10 minutes to absorb the flavors.
  3. Preheat your grill to medium-high heat, aiming for about 375–400°F (190–205°C), and oil the grates lightly to prevent sticking.
  4. Place the chicken drumsticks on the grill, skin side down, and cook for about 10–12 minutes, flipping occasionally, until the skin develops a smoky char and the meat starts to release juices.
  5. Continue grilling, turning every few minutes, until the drumsticks are cooked through with an internal temperature of 165°F (74°C) and a crispy exterior, about 15–18 minutes total.
  6. Remove the drumsticks from the grill and let them rest for 5 minutes on a platter. The resting helps juices redistribute, ensuring moist meat with a crispy outside.
