  • 0.5 tsp black pepper
  • 1 tbsp olive oil for frying

Method
 

  1. Place the ground turkey in a mixing bowl and sprinkle with salt and black pepper. Mix gently until just combined to evenly distribute the seasonings.

  2. Divide the seasoned turkey into 8 equal portions. Use a plastic wrap or parchment paper to help flatten each portion into an extremely thin, round disc, around 1/8 inch thickness. Press with your palms or a spatula for even thinness.

  3. Heat a skillet over medium-high heat and add the olive oil. Swirl to coat the surface evenly. Once hot and shimmering, carefully place four of the thin turkey discs into the skillet, ensuring they don’t overlap.

  4. Cook each side for about 2-3 minutes, or until the edges are golden brown and crispy. Use a spatula to gently flip the patties and cook the other side until similarly browned and crisp. The edges should curl slightly and the surface should appear crisp and slightly toasted.

  5. Remove the cooked patties from the skillet and place on paper towels to drain excess oil. Repeat with the remaining discs, adding more oil as needed and maintaining high heat to ensure crispness.
