  • 2 medium cucumbers thinly sliced
  • 1/4 cup fresh dill chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt adjust to taste
  • 8 slices soft bread such as white or whole wheat

Equipment

  • Sharp knife
  • Cutting board
  • Mixing bowl
  • Spoon

Method

  1. Mix together the chopped dill, lemon juice, olive oil, and salt in a small bowl until well combined, creating a bright, herbaceous dressing.
  2. Place the thinly sliced cucumbers in a bowl and pour the dill dressing over them. Toss gently to coat all slices evenly; they should look vibrant green and glossy.
  3. Lay out the slices of soft bread on a clean surface or cutting board.
  4. Using a spoon, evenly distribute a generous layer of the dill-coated cucumber slices onto one slice of bread, spreading slightly toward the edges.
  5. Cover with a second slice of bread and gently press down to help the sandwich hold together.
  6. Cut the sandwich diagonally with a sharp bread knife into two halves, revealing the crisp cucumber and herb filling inside.
  7. Arrange the sandwiches on a serving plate and serve immediately for the freshest crunch and flavor.

Notes

For extra flavor, add a thin layer of cream cheese or swap in artisan bread. Keep cucumbers chilled for the best crunch.
