  • 8 oz fresh mozzarella balls preferably small bocconcini or ciliegine
  • 1/4 cup extra virgin olive oil for marinade
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano or fresh if available
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Method
 

  1. Combine the olive oil, minced garlic, dried oregano, sea salt, and black pepper in a small bowl to create the marinade. Whisk gently until well mixed and the garlic just begins to release its aroma.
  2. Add the mozzarella balls to the marinade, gently stirring to coat all sides. Let them sit for about 10-15 minutes, allowing the flavors to infuse and the mozzarella to slightly absorb the herbaceous oil.
  3. Thread a fresh basil leaf onto a skewer, followed by a cherry tomato, then a marinated mozzarella ball. Repeat the layering to fill the skewer, ending with a cherry tomato for color.
  4. Continue assembling skewers with the remaining ingredients, ensuring each is colorful and evenly layered. Place them on a serving platter as you go.
  5. Once all skewers are assembled, drizzle any remaining marinade over them for extra flavor and shine. Serve immediately for the freshest taste and vibrant appearance.

Notes

For best flavor, prepare the skewers a few hours in advance to allow the ingredients to marinate. Use small mozzarella balls for easier threading and a more uniform presentation.
