  • 2 cups Greek yogurt full-fat preferred
  • 1 tablespoon honey adjust sweetness as desired
  • 1 teaspoon fresh lemon juice or lime juice
  • 1 tablespoon fresh mint finely chopped
  • 1/3 cup mixed nuts chopped, such as almonds, pistachios, walnuts
  • additional as needed citrus zest from lemon or orange

Method
 

  1. Line a baking sheet with parchment paper and set it aside.
  2. In a mixing bowl, whisk together Greek yogurt, honey, and fresh lemon juice until smooth and slightly tangy smelling, about 30 seconds.
  3. Fold in the finely chopped mint and citrus zest for bright, aromatic bursts.
  4. Pour the yogurt mixture onto the prepared baking sheet and spread it thin and even with a spatula, aiming for about 1/4 inch thickness.
  5. Sprinkle the chopped mixed nuts evenly over the surface, pressing them gently into the yogurt to help them stick.
  6. Place the baking sheet in the freezer and freeze for about 3 to 4 hours, or until the yogurt is firm and crisp.
  7. Once frozen solid, remove from the freezer and break into irregular, rustic pieces with your hands or a knife.
  8. Serve immediately for a crunchy, textured treat with vibrant citrus flavors and a refreshing herbal note.

Notes

For extra flavor, add berries or a drizzle of extra honey before freezing. Store leftovers in an airtight container in the freezer for up to a week.
