- Line a baking sheet with parchment paper and set it aside.
- In a mixing bowl, whisk together Greek yogurt, honey, and fresh lemon juice until smooth and slightly tangy smelling, about 30 seconds.
- Fold in the finely chopped mint and citrus zest for bright, aromatic bursts.
- Pour the yogurt mixture onto the prepared baking sheet and spread it thin and even with a spatula, aiming for about 1/4 inch thickness.
