  • 2 tablespoons honey plus extra for drizzling
  • 1/4 cup mixed nuts chopped
  • 2 tablespoons seeds such as pumpkin or sunflower seeds

Method
 

  1. Line a baking sheet with parchment paper to create a smooth base for the yogurt.
  2. In a mixing bowl, whisk together the Greek yogurt and honey until well combined and slightly glossy, which will make it smooth and easy to spread.
  3. Pour the sweetened Greek yogurt mixture onto the prepared baking sheet and spread it evenly with a spatula or the back of a spoon, creating a thin, uniform layer.
  4. Sprinkle the chopped nuts evenly over the top of the yogurt layer, distributing them to ensure each bite has some crunch.
  5. Add the seeds over the nuts, spreading them out to add texture and flavor contrast.
  6. Gently press down on the toppings to help them adhere to the yogurt and prevent them from falling off during freezing.
  7. Place the tray in the freezer and freeze for at least 2 hours, or until the yogurt is firm and fully frozen.
  8. Once frozen, remove the tray from the freezer and break the yogurt slab into irregular pieces or shards with your hands or a knife.
  9. Arrange the yogurt bark pieces on a serving platter, drizzling with a little extra honey if desired for added sweetness.
