Ingredients
  

  • 2 cups Greek yogurt full-fat or Greek-style for creaminess
  • 2 tbsp honey plus extra for drizzling
  • 1 zest lemon or orange freshly grated
  • 1/4 cup crushed pistachios unsalted

Method
 

  1. Line a baking sheet with parchment paper to provide a smooth base for the yogurt.
  2. In a mixing bowl, combine the Greek yogurt with honey and the citrus zest, mixing until the mixture is smooth and fragrant.
  3. Pour the yogurt mixture onto the prepared baking sheet and use a spatula to spread it into an even layer about 1/2 inch thick.
  4. Place the tray in the freezer and freeze for at least 3 hours, until the yogurt is firm and might be slightly icy on the edges.
  5. Remove the yogurt from the freezer and use a sharp knife to cut it into irregular, bark-like pieces.
  6. Sprinkle the crushed pistachios over the frozen yogurt bark pieces, pressing gently so they adhere to the surface.
  7. Drizzle a little additional honey over the top for extra sweetness and glossiness.
  8. Serve immediately or transfer the bark pieces to an airtight container and keep frozen until ready to enjoy.

Notes

For best texture, consume within a few days to avoid excessive ice crystals; you can also customize with different nuts or citrus types.
