  • 1 lb ground turkey lean
  • 2 medium zucchini sliced into rounds
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano optional
  • to taste salt and pepper
  • 1 tablespoon lemon juice freshly squeezed

Method
 

  1. Heat a tablespoon of olive oil in a large skillet over medium heat until shimmering.
  2. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until it turns golden brown and is cooked through, about 5-6 minutes.
  3. Add the minced garlic and dried oregano to the turkey, stirring continuously until fragrant, about 30 seconds to 1 minute.
  4. Stir in the sliced zucchini and season with salt and pepper to taste. Cook for another 5-7 minutes, until the zucchini is tender and begins to caramelize slightly along the edges.
  5. Squeeze the fresh lemon juice over the mixture, tossing gently to combine and brighten the flavors. Cook for another 1-2 minutes until everything is heated through.
  6. Remove from heat and serve hot, garnished with additional herbs if desired.
