  • 2 medium zucchini sliced into rounds

  • 1 medium onion diced
  • 1 tablespoon olive oil for cooking

Method
 

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add diced onion to the skillet and sauté, stirring occasionally, until it becomes translucent and fragrant, about 2-3 minutes.
  3. Add minced garlic and cook for another 30 seconds, until it releases a rich aroma and becomes golden around the edges.
  4. Crumble the ground turkey into the skillet and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes. Season with salt and pepper as it cooks.
  5. Add the sliced zucchini to the skillet and stir to combine with the turkey mixture.
  6. Sauté the mixture, stirring occasionally, until the zucchini is tender with caramelized edges, about 5-7 minutes. The zucchini should be bright green and slightly crispy on the edges.
  7. Taste and adjust the seasoning with more salt and pepper if needed.
