Place the patties onto the hot skillet and cook for about 3-4 minutes per side, until they develop a good brown crust and are cooked through. During the last minute, top each with a slice of cheese to melt.
While the patties cook, toast the buns cut side down in a separate pan with butter or oil until golden and slightly crispy, about 1-2 minutes. Watch carefully to prevent burning.
Spread a generous layer of special sauce on the bottom buns. Then layer with shredded lettuce and a beef patty with melted cheese, followed by some sliced pickles and chopped onion.
Place the middle bun on top and repeat the layering process—spread sauce, add lettuce, the second beef patty, pickles, and onions. Finish with the top bun.
Gently press down on the assembled burger to help everything stick together. Serve immediately for a messy, delicious result.
