- Place the hulled and halved strawberries into a saucepan and set over medium heat.
- Cook the strawberries, stirring occasionally, until they start to release their juices and become soft, about 8-10 minutes.
- Add honey to the saucepan and continue to cook, stirring gently, until the mixture thickens into a glossy sauce, another 5-7 minutes.
- Remove the saucepan from heat and stir in the vanilla extract, blending well for a fragrant aroma.
- Use a muddler or the back of a spoon to gently mash the strawberries, creating a slightly textured but mostly smooth glaze.
- Pour the hot glaze through a fine sieve or leave as is for a rustic finish, then let it cool slightly before using.

Store any leftovers in an airtight container in the refrigerator for up to a week. Reheat gently before serving if desired.
