  • 1 cup fresh cranberries quartered or left whole
  • 1 orange orange zest zest only, preferably organic
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch to thicken the filling
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats for crunch
  • 1/2 cup brown sugar light or dark
  • 1/2 cup unsalted butter cold, cut into small pieces

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease four individual ramekins or a small baking dish.
  2. In a mixing bowl, combine the cranberries, orange zest, sugar, and cornstarch. Toss gently to coat the fruit evenly and set aside to let the flavors meld.
  3. In another bowl, whisk together the flour, oats, and brown sugar to create the streusel topping.
  4. Add the cold, small diced butter into the dry mixture. Use your fingers or a pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  5. Divide the cranberry mixture evenly among the ramekins or spread evenly in the baking dish.
  6. Sprinkle the crumbly streusel topping evenly over each filled ramekin or the entire dish if using one larger baking pan.
  7. Place the ramekins or baking dish in the preheated oven and bake for about 20–25 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
  8. Once baked, remove from the oven and let cool slightly. The filling should be thickened and vibrant, with a crisp topping ready to be served.
  9. Serve the individual crisps warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream for extra comfort.

Notes

For a richer topping, add chopped nuts like pecans or walnuts. To enhance orange flavor, add a splash of orange liqueur before baking.
