  • 1/2 cup extra virgin olive oil for marinade
  • 2 tablespoons red wine vinegar for marinade
  • 3 cloves garlic minced
  • 1 bunch fresh basil stems removed, leaves chopped
  • 8 ounces fresh mozzarella cut into bite-sized pieces
  • 20 cherry tomatoes ripe cherry tomatoes

Method
 

  1. Mix the extra virgin olive oil, red wine vinegar, minced garlic, chopped basil leaves, and a pinch of salt and pepper in a small bowl until well combined. This creates the flavorful marinade.
  2. Gently toss the mozzarella pieces and cherry tomatoes in the marinade, ensuring each piece is coated evenly. Let them sit and soak for about 10 minutes to absorb the flavors.
  3. Thread a piece of mozzarella onto a skewer, followed by a cherry tomato, then another piece of mozzarella, and finally a second cherry tomato. Continue this pattern until all skewers are assembled.
  4. Arrange the completed skewers on a serving platter. If desired, drizzle with any remaining marinade for extra flavor.
  5. Serve the skewers chilled or at room temperature, allowing the flavors to meld and the cheese to be slightly tangy and fragrant from the basil-infused marinade.
