  • 1 tablespoon fresh herbs chopped, optional

Method
 

  1. Preheat your oven to 180°C (350°F) and generously spray or butter the mini muffin tin to prevent sticking.
  2. Unroll the pastry dough on a floured surface and use a pastry cutter or glass to cut out small circles that will fit into each muffin cup.
  3. Press each pastry circle into the muffin cups, making sure to cover the bottom and sides to form little cups.
  4. In a bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth and slightly frothy, which indicates the custard is well combined.
  5. Chop your fillings—cheese, bacon bits, herbs, or veggies—and stir them into the egg mixture for added flavor.
  6. Pour the custard mixture into each pastry-lined cup, filling about three-quarters full to allow for puffing during baking.
  7. Bake in the preheated oven for 15 to 20 minutes, until the bites are puffed, golden, and just set in the center, with a slight jiggle indicating perfect doneness.
  8. Remove from the oven and let the mini quiche bites cool in the tin for 5 minutes, then transfer to a cooling rack to prevent sogginess and make serving easier.
