  • 1 cup shredded cheese Cheddar or Mexican blend
  • 2 jalapenos jalapeno peppers sliced into rings
  • 1 bag potato chips Optional for extra crunch
  • to taste salt and pepper for seasoning
  • 2 tablespoons oil for frying

Method
 

  1. Peel and cut the potatoes into thin, even strips resembling fries. Rinse and pat dry with paper towels.

  2. Heat oil in a frying pan or deep fryer over medium-high heat until shimmering and hot (around 350°F / 175°C). Carefully add the potato strips, frying until golden brown and crispy, about 5-7 minutes. Use a slotted spoon to remove and drain on paper towels.

  3. Preheat the oven to 375°F (190°C). Arrange the crispy fries evenly on a baking sheet. Sprinkle generously with shredded cheese and sliced jalapenos. Bake until cheese melts thoroughly, about 8-10 minutes.

  4. Optional: In a separate bowl, toss some potato chips if desired for added crunch. Scatter over the baked fries just before serving for extra texture.
