  1. Line an 8x8 inch pan with parchment paper, leaving a slight overhang for easy removal.
  2. Combine the peanut butter and honey in a microwave-safe bowl. Microwave in 30-second bursts, stirring each time, until the mixture is smooth, fragrant, and slightly bubbly.
  3. Pour the warm peanut butter mixture into the prepared pan and spread it evenly with a spatula, smoothing the surface.
  4. In a separate microwave-safe bowl, melt the chocolate chips in short bursts, stirring until silky and completely smooth—this should take about 1-2 minutes total.
  5. Pour the melted chocolate over the peanut butter layer, then use the spatula to spread it into an even, glossy top.
  6. Place the pan in the fridge and chill for at least 1 hour until the chocolate is firm and the bars are set.
  7. Once chilled, lift the bars out of the pan using the parchment overhang and transfer to a cutting board.
  8. Using a sharp knife, cut the bars into squares, wiping the blade with a warm cloth between cuts for clean edges.
  9. Optional: drizzle with extra melted chocolate or sprinkle chopped peanuts on top before returning to the fridge for a few minutes to set toppings.
  10. Serve the bars straight from the fridge for a cool, firm bite or at room temperature for softer, gooey texture. Store leftovers in an airtight container in the fridge for up to 3 days.
