Pancake Bites

Pancake bites are small, round snacks made from pancake batter that are cooked until crispy on the edges and soft inside. They are typically fried or baked until golden, resulting in a bite-sized treat with a tender interior and a slightly caramelized exterior. These bites are easy to customize with add-ins like chocolate chips or fruit, making them a fun, portable breakfast or snack.

Ingredients

  • 1 cup all-purpose flour sifted
  • 2 tablespoons granulated sugar optional for sweetness
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk dairy or plant-based
  • 1 large egg
  • 2 tablespoons unsalted butter melted
  • 1/2 cup chocolate chips optional

Equipment

  • Mixing bowl
  • Frying pan or skillet
  • Baking sheet (optional for oven method)
  • Cooking spatula

Method

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
  2. In a separate bowl, beat the egg with the milk and melted butter until smooth and well blended.
  3. Pour the wet mixture into the dry ingredients and gently fold together using a spatula, just until the batter is combined. Do not overmix; the batter should be slightly lumpy.
  4. If desired, fold in chocolate chips or other add-ins at this stage.
  5. Preheat a frying pan or skillet over medium heat, and lightly grease with butter or cooking spray.
  6. Using a small cookie scoop or spoon, drop rounded tablespoons of batter into the hot pan, spacing them evenly apart.
  7. Cook the pancake bites for about 2-3 minutes until the edges are set and bubbly, and the bottoms are golden brown.
  8. Flip each bite carefully using a spatula and cook for another 2 minutes until golden and cooked through.
  9. Remove the bites from the pan, placing them on a paper towel-lined plate to drain excess oil and maintain crispiness.
  10. Repeat with the remaining batter, adjusting heat as needed to prevent burning.
  11. Serve the pancake bites warm, with syrup, fresh fruit, or your favorite toppings for dipping.

Notes

For extra flavor, add vanilla extract or cinnamon to the batter before mixing. These bites are best enjoyed fresh but can be reheated in a toaster or oven. Feel free to customize with nuts, dried fruit, or other mix-ins.
