Ingredients
  

  • 2 cups fresh peach slices pitted and peeled
  • 4 cups water for brewing tea
  • 4 bags black tea
  • 2 tablespoons elderflower syrup adjust based on sweetness preference
  • 1 bunch fresh basil leaves only
  • 1 tablespoon honey optional, for added sweetness

Method
 

  1. Bring water to a boil in a saucepan and steep the black tea bags for about 8 minutes, until the tea is strong and aromatic. Remove the tea bags and let the tea cool to room temperature.
  2. While the tea cools, blend the fresh peach slices until smooth, creating a vibrant peach puree. Set aside.
  3. Rinse and gently crush the basil leaves to release their fragrance, then add them to the cooled tea, allowing the flavors to infuse for about 10 minutes. Strain out the basil leaves and discard them.
  4. Pour the peach puree into the cooled, infused tea, stirring gently to combine. Add elderflower syrup and honey, if using, and mix until well incorporated.
  5. Fill a pitcher with ice cubes, then pour the peach and tea mixture over the ice, ensuring it’s well chilled and slightly diluted to your liking. Stir gently.
  6. Garnish with fresh basil leaves or peach slices, and serve immediately for a vibrant, fragrant summer refreshment.

Notes

Adjust sweetness and herbal intensity to taste. For a smoother flavor, strain the infused tea more thoroughly. Best served chilled on hot summer days.
