Ingredients
  

  • 2 cups fresh pineapple chunks ripe and juicy
  • a handful fresh mint leaves bright and aromatic
  • 0.25 cup coconut water or fruit juice
  • 1 tablespoon lime juice optional, brightens flavor
  • 2 teaspoons honey or agave syrup optional, for added sweetness

Method
 

  1. Place the pineapple chunks, fresh mint leaves, coconut water, lime juice, and honey into your blender.
  2. Blend everything on high until the mixture is completely smooth and vibrant in color, about 30 seconds. You should see a fragrant aroma of pineapple and mint filling the air.
  3. Taste the mixture and adjust the mint or sweetness if needed—add a little more honey or mint for a stronger flavor.
  4. Pour the bright, slushy mixture evenly into your popsicle molds, leaving about 1/4 inch space at the top to allow for expansion during freezing.
  5. Insert the sticks into each mold and gently press down to ensure the mixture surrounds the sticks completely.
  6. Place the molds in the freezer and let them freeze for at least 4 hours, preferably overnight, until they are completely firm and frosty.
  7. Once frozen, briefly run warm water over the outside of each mold to loosen the popsicles.
  8. Gently pull the popsicles out of the molds and let them sit at room temperature for a minute if they resist removal.
  9. Serve immediately for a frosty, refreshing treat, or wrap in parchment and store in a sealed container in the freezer for up to 2 months.
