  • 4 large bagels preferably day-old for easier hollowing
  • 1/2 cup shredded cheese cheddar, Swiss, or your choice
  • 4 large eggs beaten
  • 1/2 cup milk whole or any preferred type
  • 1/4 cup diced ham optional, for extra flavor

Method
 

  1. Preheat the oven to 375°F (190°C). Slice the bagels in half horizontally and carefully scoop out most of the inside with a spoon, creating a hollow shell while keeping the crust intact. Place the hollowed bagels on a baking sheet.
  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined; this forms your quiche filling.
  3. Stir in the shredded cheese, diced ham, and a pinch of salt and pepper, folding until evenly distributed within the egg mixture.
  4. Spoon the cheese and ham mixture into each hollowed-out bagel half, filling them generously but avoiding overflows.
  5. Place the filled bagels into the oven and bake for about 20 minutes, or until the filling is set and the bagel edges are golden brown and crispy.
  6. Remove from the oven, let cool slightly, and then slice or serve whole, showcasing the bubbling, cheesy filling inside a crispy crust.

Notes

Feel free to customize with your favorite fillings, such as spinach or mushrooms. Make sure not to overfill to prevent spilling during baking.
