Ingredients
  

  • 2 cups shredded mozzarella cheese
  • 1 cup cooked, shredded chicken preferably roasted
  • 1/2 cup fresh basil leaves roughly chopped
  • 1 clove garlic minced
  • 2 tbsp olive oil for drizzling
  • 1 flatbread or naan flatbread base for the pizza
  • to taste salt and pepper

Method
 

  1. Preheat your oven to 400°F (200°C) and place a baking sheet inside to heat up.
  2. Meanwhile, chop the fresh basil leaves and mince the garlic to prepare your toppings.
  3. Spread the flatbread on a clean surface and brush lightly with olive oil, helping it crisp and form a flavorful base.
  4. Remove the hot baking sheet from the oven carefully and transfer the prepared flatbread onto it.
  5. Sprinkle the shredded mozzarella evenly over the flatbread, creating a bubbly layer that will melt into a gooey topping.
  6. Distribute the cooked shredded chicken across the cheese, then add the minced garlic and chopped basil on top.
  7. Drizzle a little olive oil over the toppings and season with salt and pepper to enhance flavor.
  8. Place the baking sheet back into the oven and bake for about 10-15 minutes, until the cheese is melted and bubbly and the crust is golden brown.
  9. Carefully remove the flatbread from the oven and let it cool slightly, so the cheese sets just enough for easy slicing.
  10. Cut into slices and serve warm, garnished with extra basil if desired.

Notes

Feel free to add roasted tomatoes or a splash of balsamic vinegar for extra flavor. Best enjoyed warm out of the oven.
