Ingredients
  

  • 1 lb kielbasa or sausage links sliced into rounds
  • 1 bell pepper bell pepper sliced into strips
  • 1 carrot carrot sliced into thin rounds
  • 3 cloves garlic minced
  • 1 teaspoon paprika smoked or sweet
  • 2 tablespoons olive oil
  • to taste salt and pepper

Method
 

  1. Slice the kielbasa into ½-inch rounds, and prepare vegetables by slicing bell pepper and carrot into thin strips or rounds. Mince the garlic cloves.
  2. Heat olive oil in a large skillet over medium heat until shimmering. Add the sausage slices and cook, stirring occasionally, until browned on both sides and slightly crispy, about 5 minutes.
  3. Add the sliced vegetables to the skillet with the sausage. Sauté, stirring frequently, for about 5-7 minutes until vegetables are tender and slightly caramelized around the edges.
  4. Stir in the minced garlic and paprika, cooking for an additional 30 seconds to 1 minute until the garlic is fragrant and paprika is evenly distributed. The mixture should be fragrant, with the garlic golden and aromatic.
  5. Season with salt and pepper to taste. Continue cooking until everything is heated through and mixture is slightly caramelized, about 2-3 minutes. Remove from heat and serve hot.
