Ingredients

  • 12 pieces pitted dates look for plump, moist ones
  • 6 ounces goat cheese or cream cheese as a milder alternative
  • 12 slices prosciutto thin slices for crisping
  • 12 whole almonds toasted for crunch
  • optional honey for drizzling, if desired

Equipment

  • Sharp paring knife
  • Baking sheet
  • Toothpicks
  • Spoon

Method

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. Use a sharp paring knife to carefully slice each date lengthwise, opening it gently without tearing the fruit. Remove the pit if present.
  3. Spoon a small dollop of goat cheese into each opened date, pressing it gently to fill the cavity.
  4. Place a toasted almond into each cheese-filled date, pressing it lightly into the cheese for secure placement.
  5. Wrap each stuffed date with a half slice of prosciutto, wrapping snugly around the fruit, and secure with a toothpick if needed.
  6. Arrange the prosciutto-wrapped dates on the prepared baking sheet, spacing them evenly.
  7. Bake in the preheated oven for 12-15 minutes, until the prosciutto is crisp and golden, and the cheese is starting to melt.
  8. Remove the tray from the oven and let the bites cool for a few minutes. Carefully remove toothpicks if used.
  9. If desired, drizzle with a touch of honey for extra sweetness, then serve warm or at room temperature.

Notes

For variation, try filling with blue cheese, adding chopped pecans, or a light drizzle of honey before serving. Keep an eye on the prosciutto during baking to prevent burning; it should be golden and crisp. Serve these bites at parties or as a sophisticated snack for special occasions.
