Ingredients
  

  • 14 oz firm tofu pressed and dried
  • 2 tbsp soy sauce or tamari for gluten-free
  • 1 tsp sesame oil for marinade
  • 2 tbsp apricot jam or apricot preserves
  • 1 cup fresh apricots thinly sliced, or dried apricots soaked
  • 1 tbsp toasted sesame seeds for garnish
  • 1 bunch scallions chopped, optional
  • 2 cups mixed greens for serving

Method
 

  1. Press the tofu for at least 15 minutes to remove excess moisture, then cut into 1-inch cubes.
  2. In a mixing bowl, whisk together soy sauce, sesame oil, and apricot jam. Add the tofu cubes and marinate for 30 minutes, tossing occasionally so they soak up the flavors.
  3. Heat a non-stick skillet over medium heat until warm. Carefully place the marinated tofu cubes in the skillet, searing in batches if necessary to avoid overcrowding.
  4. Cook the tofu for about 3-4 minutes per side, turning gently with a spatula, until all sides are golden and crispy with a slight caramelized glaze.
  5. While the tofu fries, toast the sesame seeds in a dry skillet over medium-low heat, stirring constantly until fragrant and golden, about 2 minutes.
  6. Slice fresh apricots thinly, or drain and soak dried apricots until plump and soft. Arrange the slices on a plate for assembly.
  7. Place a handful of mixed greens in each serving bowl, creating a fresh base for your dish.
  8. Add the crispy tofu on top of the greens, then arrange the apricot slices alongside for a colorful presentation.
  9. Drizzle any remaining marinade over the bowl, sprinkle toasted sesame seeds, and garnish with chopped scallions if desired.
  10. Serve immediately to enjoy the warm, crispy tofu with the sweet and fresh flavors of apricot and sesame.
