Ingredients

  • 12 oz penne pasta uncooked
  • 3 tablespoons olive oil extra virgin preferred
  • 4 cloves garlic minced
  • 1 can (28 oz) crushed tomatoes preferably San Marzano or high-quality peeled
  • 1 teaspoon red pepper flakes adjust based on spice tolerance
  • Salt to taste salt
  • Fresh basil leaves fresh basil for garnish

Equipment

  • Large pot
  • Skillet or frying pan
  • Slotted spoon

Method

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, following package instructions, then drain and set aside.
  2. Heat the olive oil in a skillet over medium heat until it shimmers and begins to smell fragrant.
  3. Add the minced garlic to the hot oil and sauté for about 30 seconds, until it turns golden and releases a rich aroma.
  4. Pour in the crushed tomatoes, stirring to combine with the garlic and olive oil. Bring the sauce to a gentle simmer.
  5. Stir in the red pepper flakes and season with a pinch of salt. Let the sauce simmer for 10 minutes, allowing the flavors to deepen and the sauce to thicken slightly.
  6. Add the drained penne to the skillet, tossing to coat each piece in the spicy tomato sauce until heated through, about 2-3 minutes.
  7. Garnish the finished dish with freshly torn basil leaves for a fragrant, colorful touch.

Notes

Adjust the amount of red pepper flakes to control the spice level. For a smoother sauce, blend the tomatoes before adding to the skillet. Serve immediately for the best flavor and texture.
