  • 4 cups fresh spinach leaves chopped
  • 3 cloves garlic minced
  • 1 cup shredded cheese cheddar or mozzarella work well
  • 1 large egg beaten
  • 0.5 cup all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

  1. Heat a large skillet over medium heat and add a tablespoon of olive oil. Once shimmering, add the minced garlic and sauté until fragrant, about 30 seconds.
  2. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  3. Transfer the cooked spinach to a mixing bowl and add the shredded cheese, beaten egg, flour, salt, and pepper. Mix everything thoroughly until well combined and the mixture is sticky but manageable.
  4. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  5. Using a spoon or cookie scoop, portion out the mixture and shape it into small balls or rounds, about 1 inch in diameter. Place each on the prepared baking sheet, leaving space between each.
  6. Bake in the preheated oven until golden brown on the edges, about 12-15 minutes. The bites should be crisp on the outside and tender inside.
  7. Remove from the oven and let cool slightly — they will be hot and crunchy around the edges, with a soft interior.
