Heat a skillet over medium heat and add a splash of olive oil.
Add minced garlic to the skillet and sauté until fragrant, about 30 seconds, until you smell the aroma and the garlic starts to turn golden.
Add chopped spinach to the skillet and cook, stirring frequently, until wilted and bright green, about 2 minutes. Season with salt and pepper to taste.
Remove the cooked spinach mixture from the skillet and transfer to a bowl to cool slightly.
Lay one tortilla on a flat surface and evenly spread the sautéed spinach over half of it, then sprinkle crumbled feta cheese on top.
Fold the tortilla in half over the filling, pressing down gently to compact the ingredients.
Place the folded tortilla into the heated skillet and cook for about 3–4 minutes per side, until golden brown and crispy. Flip carefully with a spatula to cook evenly.
Once both sides are golden and crispy, remove from the skillet and let rest for a minute before slicing.
Cut into wedges and serve warm, with optional sides or toppings if desired.
