  1. Sauté the chopped spinach in a dry skillet over medium heat until wilted and any excess moisture evaporates, about 3-4 minutes. Let it cool slightly.
  2. Transfer the cooked spinach to a large mixing bowl and add the bread crumbs, Parmesan cheese, minced garlic, eggs, salt, and black pepper.
  3. Drizzle in the olive oil and mix everything together thoroughly until the mixture holds together but is not sticky—this helps it form good balls.
  4. Using your hands, shape the mixture into small, compact balls about 1 to 1.5 inches in diameter, placing them on a baking sheet lined with parchment paper.
  5. Preheat your oven to 375°F (190°C). Once hot, bake the spinach balls for about 15-20 minutes, until they turn golden brown and have a crispy exterior.
  6. Remove from the oven and let them cool slightly—this helps firm up the outside before serving.
