  • 1 cup grated cheese cheddar or mozzarella
  • 1 cup breadcrumbs plain or seasoned
  • 2 large eggs beaten
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil for greasing the baking sheet

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with olive oil.
  2. Place the chopped spinach in a clean kitchen towel and gently squeeze out excess moisture to keep the mixture from getting too watery.
  3. In a large mixing bowl, combine the chopped spinach, grated cheese, breadcrumbs, beaten eggs, salt, and black pepper. Mix everything together until the ingredients are evenly distributed and form a sticky, cohesive mixture.
  4. Using a tablespoon or your hands, scoop out small portions and roll them into compact balls, about the size of a walnut. Place each ball onto your prepared baking sheet, spacing them apart.
  5. Bake in the preheated oven for about 15-20 minutes, or until the outside is golden brown and crispy.
  6. Remove the spinach cheese balls from the oven and let them cool slightly. They should be crispy on the outside with a soft, cheesy interior.
