  • 1 tbsp honey or maple syrup

Method
 

  1. Set up your spiralizer with the wide blade and spin your cucumbers and carrots into long, even spirals, creating delicate ribbons that look playful and inviting.
  2. Transfer the spiralized vegetables to a large mixing bowl, ensuring they're evenly spread out for easy tossing.
  3. In a small bowl, whisk together the rice vinegar, honey, olive oil, and a pinch of salt until the dressing is smooth and slightly frothy.
  4. Pour the dressing over the spiralized vegetables, then sprinkle in the chopped dill and citrus zest for a burst of fresh aroma.
  5. Gently toss everything together with tongs or two large spoons until the spirals are evenly coated and the herbs are well distributed.
  6. Let the salad sit for about 5 minutes to allow the flavors to meld and the vegetables to absorb some of the dressing.
  7. Give the salad one more gentle toss, then taste and adjust salt if needed to enhance the flavor.
