Ingredients

  • 8 oz fresh mozzarella balls preferably small pearl size
  • 1 cup cherry tomatoes ripe and firm
  • 1/4 cup fresh basil leaves whole leaves
  • 3 tablespoons red wine vinegar for marination
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Equipment

  • Skewers or small wooden sticks
  • Mixing bowl
  • Knife
  • Cutting board
  • Measuring spoons

Method

  1. Combine the red wine vinegar, olive oil, minced garlic, salt, and black pepper in a small bowl to create the marinade. Whisk everything together until well blended and fragrant.
  2. Place the mozzarella balls in a shallow dish or bowl and pour the marinade over them. Toss gently to coat evenly. Let them marinate for about 5 minutes—this helps the flavors infuse into the cheese.
  3. Thread a cherry tomato onto a skewer, followed by a basil leaf, then a marinated mozzarella ball, another basil leaf, and finally another cherry tomato. Repeat this layering pattern until each skewer is full, typically 3-4 sets per skewer.
  4. Arrange the finished skewers on a serving platter. Optionally, drizzle any remaining marinade over the assembled skewers for extra flavor and a shiny finish.
  5. Take a moment to admire the vibrant colors and fragrant herbs before serving. These skewers are best enjoyed fresh, with all the bright, springtime flavors intact.

Notes

Feel free to add black olives or switch herbs for variety. Marinate the mozzarella briefly for more intense flavor.
