Method
- In a mixing bowl, combine the rolled oats, milk, softened cream cheese, vanilla extract, and honey. Whisk until the mixture is smooth and the cream cheese is fully incorporated, with no lumps. The mixture should be creamy and slightly thickened.
- Gently fold in the diced strawberries, distributing them evenly throughout the oat mixture. You'll see bits of bright red fruit contrasting against the creamy base.
- Pour the mixture into a jar or an airtight container, smoothing the top with the back of a spoon or spatula. Seal the container tightly to prevent leaks.
- Refrigerate the jar for at least 4 hours or preferably overnight. This allows the oats to soak up the flavors and develop a tender, pudding-like texture, while the strawberries release their juices.
- Once chilled, open the jar and give the oats a gentle stir to mix in the strawberry juices. The mixture should be thick, creamy, and invitingly fragrant with vanilla and fruit aroma.
- Serve the overnight oats directly from the jar or transfer to a bowl. Top with additional fresh strawberries or a drizzle of honey if desired for extra flavor and presentation.
