  1. Combine the strawberries, lemon peel, and sugar in a saucepan over medium heat.
  2. Bring the mixture to a gentle simmer, stirring occasionally to dissolve the sugar and release the juices.
  3. Cook for about 10-15 minutes, mashing some of the strawberries with the back of the spoon to help break them down and thicken the syrup.
  4. Watch as the mixture thickens and becomes glossy, with the strawberries losing their shape and blending into a vibrant red sauce.
  5. Remove the pan from heat once the desired consistency is reached and the sauce is fragrant and slightly thickened.
  6. Allow the compote to cool slightly before transferring to a jar or bowl for serving.
