  • 1 cup all-purpose flour for the crust and topping
  • 1/2 cup rolled oats adds texture to the topping
  • 1/2 cup granulated sugar for sweetness in crust and topping
  • 1/2 cup unsalted butter cold and cubed
  • 4 cups fresh strawberries hulled and sliced
  • 2 tablespoons granulated sugar to sweeten strawberries
  • 1 tablespoon cornstarch to thicken strawberry juices

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper for easy removal.
  2. In a mixing bowl, combine the flour, oats, and sugar for the crust and topping. Stir until evenly mixed.
  3. Add the cold, cubed butter to the dry mixture. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Press two-thirds of the crumb mixture evenly into the bottom of the prepared baking pan. Use the back of a spoon to firm it up and create a compact crust.
  5. In a separate bowl, gently mix the sliced strawberries with sugar and cornstarch until coated. Spread this mixture evenly over the crust layer.
  6. Sprinkle the remaining crumb mixture evenly over the strawberries, covering them completely for a crunchy top.
  7. Bake in the preheated oven for about 35 minutes, or until the topping is golden brown and the strawberries are bubbling around the edges.
  8. Allow the bars to cool in the pan for at least 15 minutes, then lift out using the parchment paper and cut into squares.
  9. Enjoy these bars fresh with a cup of tea or store them in an airtight container for later.

Notes

For a more pronounced strawberry flavor, sprinkle a little extra sugar on the strawberries before baking.
