Stuffed Bagel with Ham and Cheesy Quiche Filling

Ingredients
  

  • 2 pieces bagels preferably plain or sesame
  • 4 large eggs beaten
  • 1/2 cup shredded cheese cheddar or mozzarella work well
  • 1 cup fresh spinach chopped
  • 4 slices ham diced
  • 1 tablespoon butter melted
  • to taste salt and pepper

Method
 

  1. Preheat your oven to 375°F (190°C). Slice the bagels in half horizontally and use a spoon to gently scoop out some of the inner bread, leaving a sturdy shell. Set the bagel insides aside for another use or discard.
  2. In a mixing bowl, whisk together the eggs until well combined and slightly frothy. Stir in the shredded cheese, chopped spinach, diced ham, and a pinch of salt and pepper.
  3. Melt the butter and brush the inside of each bagel shell lightly with it. This will help the bagel become golden and flaky as it bakes.
  4. Spoon the egg mixture evenly into each bagel shell, filling them close to the top with a little overflow expected as it bakes.
  5. Place the filled bagels on a baking sheet and bake in the preheated oven for about 15 minutes, or until the filling is puffed and just set, and the edges of the bagels turn golden brown.
  6. Remove from the oven and let cool slightly for a minute. Slice in half if desired, and serve warm to enjoy the gooey, cheesy interior with a crispy outside.

Notes

For extra flavor, sprinkle with fresh herbs or a dash of hot sauce before baking.
