  • 4 medium zucchinis thinly sliced
  • 4 large ripe tomatoes sliced into rounds
  • 1 cup shredded cheese mozzarella or Italian blend

  • 1 tablespoon balsamic vinegar optional, for added flavor

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish to prepare for layering.
  2. Heat olive oil in a skillet over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant, smelling slightly nutty and seeing the garlic turn golden.
  3. Add the sliced zucchinis to the skillet and cook for 3-4 minutes, stirring gently until they soften slightly and mesh with the garlic aroma.
  4. Arrange a layer of zucchini slices at the bottom of the prepared baking dish, overlapping slightly for an even base.
  5. Sprinkle a little salt, pepper, and a splash of balsamic vinegar over the zucchini layer to add depth of flavor.
  6. Add a layer of tomato slices on top of the zucchini, overlapping gently to cover fully.
  7. Repeat the layering process—zucchini then tomato—until all ingredients are used, finishing with a layer of tomatoes on top.
  8. Sprinkle the shredded cheese evenly over the top layer, ensuring full coverage for melty, golden goodness.
  9. Place the dish in the preheated oven and bake for 30-35 minutes, until the cheese is bubbly and golden, and the vegetables are tender to the touch.
  10. Remove from the oven and let it rest for a few minutes, allowing the flavors to meld and the cheese to settle slightly.
  11. Slice into squares or wedges, revealing the colorful, layered interior with melted cheese bubbling on top. Serve warm and enjoy the fresh, hearty flavors.

Notes

For extra flavor, add fresh basil or oregano before baking. You can also substitute a different melting cheese if preferred.
