Ingredients

  • 2 pieces cucumbers preferably English or seedless
  • 3 bells bell peppers mixed color is nice
  • ¼ cup fresh dill chopped finely
  • 3 tablespoons white vinegar or apple cider vinegar
  • 2 tablespoons olive oil extra virgin preferred
  • 1 teaspoon honey or to taste
  • to taste salt and freshly ground black pepper

Equipment

  • Sharp knife
  • Mixing bowl

Method

  1. Wash the cucumbers and bell peppers thoroughly. Peel the cucumbers if desired, then slice both the cucumbers and peppers into thin, even strips for a crisp texture.
  2. Chop the fresh dill finely, releasing its aromatic scent and brightening the salad’s appearance.
  3. In a large mixing bowl, combine the sliced cucumbers and peppers, ensuring they are evenly distributed to showcase their vibrant colors and textures.
  4. In a small bowl, whisk together the vinegar, olive oil, honey, and a pinch of salt and pepper until the dressing is smooth and slightly emulsified.
  5. Pour the dressing over the vegetables in the mixing bowl, then toss gently with tongs or two spoons to coat evenly, allowing the flavors to meld and the cucumbers to slightly soften.
  6. Sprinkle the chopped dill over the salad, giving it a final toss so the herbs are evenly distributed and aromatic.
  7. Let the salad sit for 5-10 minutes at room temperature to allow the flavors to develop and the vegetables to absorb the dressing, resulting in a crisp, flavorful dish.
  8. Serve immediately in bowls or on a platter, garnished with extra dill if desired, enjoying the fresh, crunchy texture and lively herbaceous aroma of the salad.

Notes

Feel free to add a sprinkle of crumbled feta or a few olives for extra flavor.
