Ingredients

  • 1 1/2 cups rolled oats lightly toasted for flavor
  • 2 ripe bananas mashed until smooth
  • 2 eggs beaten
  • 1/4 cup brown sugar or coconut sugar
  • 1/2 cup milk dairy or plant-based
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract optional
  • 1/2 cup nuts or dried fruit optional, chopped

Equipment

  • Muffin tin
  • Mixing bowls
  • Skillet
  • Whisk or fork
  • Spatula or spoon
  • Toothpick or cake tester

Method

  1. Preheat your oven to 180°C (350°F). Lightly toast the oats in a dry skillet over medium heat for about 3 minutes until fragrant and golden, then set aside to cool slightly.
  2. In a large bowl, mash the ripe bananas until smooth. Add the beaten eggs, brown sugar, vanilla, and milk. Whisk everything together until the mixture is well combined and slightly frothy.
  3. Pour the toasted oats into the wet mixture, stirring gently. Add the baking powder and stir again until just combined. If using nuts or dried fruit, fold them into the batter now.
  4. Scoop the batter into a greased or lined muffin tin, filling each cup about three-quarters full. Use a spatula or spoon to smooth the tops if needed.
  5. Bake in the preheated oven for 20-25 minutes, until the muffins turn a beautiful golden brown and a toothpick inserted into the center comes out clean. The aroma of toasted oats and bananas will fill your kitchen.
  6. Remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer to a wire rack to cool completely or enjoy warm, feeling the tender crumb and slight crunch from the toasted oats.

Notes

Feel free to customize with your favorite add-ins like chocolate chips or different nuts. For a vegan version, replace eggs with flax eggs and use plant-based milk.
