Watermelon granita is a frozen dessert made by blending ripe watermelon with sugar and lemon juice, then freezing and scraping the mixture to create icy, granular crystals. Ingredients
  

  • 4 cups ripe watermelon cubes seedless if possible
  • 1/2 cup granulated sugar adjust to taste
  • 2 tablespoons fresh lemon juice brightens flavor

Method
 

  1. Place the watermelon cubes in a blender, ensuring it's not overcrowded to achieve smooth blending.
  2. Add the sugar to the blender and blend until the mixture is smooth and the sugar dissolves completely, about 30 seconds.
  3. Pour in the lemon juice and blend for another 5 seconds to incorporate.
  4. Taste the mixture and add more sugar if desired, blending briefly to combine.
  5. Pour the blended mixture into a shallow baking sheet, spreading it out evenly with a spatula.
  6. Place the baking sheet in the freezer, and every 30 minutes, use a fork to scrape and break up the ice crystals, fluffing the mixture until it reaches a granular, snow-like texture. Repeat this process 3-4 times over 2-3 hours.
  7. Once the granita is fully frozen and has a flaky, icy texture, serve it in chilled glasses or bowls.

Notes

For a stronger watermelon flavor, you can increase the amount of watermelon. To make it more visually appealing, garnish with fresh mint leaves or a small wedge of lime.
