Ingredients
  

  • 4 cups cubed watermelon seedless preferred
  • 1/4 cup fresh lemon juice about 2 lemons
  • to taste honey or simple syrup optional, for extra sweetness
  • 1 pinch salt to enhance flavor

Method
 

  1. Place the cubed watermelon into a blender.
  2. Blend the watermelon on high until it’s completely smooth and liquidy, about 30 seconds. You should see a vibrant red or pink juice start to form.
  3. Pour the blended watermelon through a fine-mesh strainer into a pitcher, using the back of a spoon to help push the juice through. Discard or set aside the pulp.
  4. Add the fresh lemon juice to the strained watermelon juice and stir well, creating a balanced mixture of sweet and tart.
  5. If desired, stir in honey or simple syrup for extra sweetness, tasting and adjusting as needed.
  6. Sprinkle a pinch of salt into the mixture to enhance the flavors, then give it one last stir together.
  7. Chill the watermelon lemonade in the refrigerator for at least 30 minutes to allow the flavors to meld.
  8. Serve the watermelon lemonade over ice in glasses, garnished with a wedge or slice of watermelon or lemon if desired.

Notes

For a sparkling version, top with club soda just before serving. You can also add fresh mint for an extra refreshing touch.
