Ingredients
  

  • 4 cups watermelon cubes seeded or seedless, peeled and deseeded if necessary
  • 1/4 cup fresh mint leaves plus extra for garnish
  • 2 tablespoons lime juice freshly squeezed
  • to taste honey or agave syrup optional, for sweetness

Method
 

  1. Cut the watermelon into bite-sized cubes, removing any seeds if present, and place them in a blender.
  2. Add the fresh mint leaves to the blender with the watermelon and squeeze in the lime juice.
  3. If desired, drizzle in a little honey or agave syrup for extra sweetness, adjusting to your taste.
  4. Pulse the blender a few times to start breaking down the watermelon and mixing in the mint.
  5. Blend on high for about 30 seconds until the mixture is smooth and vibrant pink.
  6. If you prefer a clearer juice, pour the mixture through a fine mesh strainer into a pitcher, using the back of a ladle to press out the liquid.
  7. Pour the chilled juice into glasses and garnish with additional mint leaves and a lime wedge if desired.
  8. Enjoy immediately for a fresh, cooling burst of watermelon and mint.

Notes

For an extra chill, serve over ice or refrigerate for 10-15 minutes before enjoying.
