- Cut the watermelon into bite-sized cubes, removing any seeds if present, and place them in a blender.
- Add the fresh mint leaves to the blender with the watermelon and squeeze in the lime juice.
- If desired, drizzle in a little honey or agave syrup for extra sweetness, adjusting to your taste.
- Pulse the blender a few times to start breaking down the watermelon and mixing in the mint.
- Blend on high for about 30 seconds until the mixture is smooth and vibrant pink.
- If you prefer a clearer juice, pour the mixture through a fine mesh strainer into a pitcher, using the back of a ladle to press out the liquid.
- Pour the chilled juice into glasses and garnish with additional mint leaves and a lime wedge if desired.
- Enjoy immediately for a fresh, cooling burst of watermelon and mint.
Notes
For an extra chill, serve over ice or refrigerate for 10-15 minutes before enjoying.
